Hearty Beef Pasta Casserole – The Recipe

1 tbsp. olive oil

1 lb. minced beef

2 cups elbow macaroni, cooked

1 small onion, chopped

2 garlic cloves, minced

1 green bell pepper, chopped

1 cup corn kernels, chopped

1 cup diced tomatoes

2 cups canned tomato sauce

3 tsp. Italian seasoning

1 cup grated parmesan cheese, divided

1 cup shredded mozzarella cheese, divided

Black pepper to taste

Salt to taste


  1. Place a skillet over medium-high heat and grease with olive oil. Once the oil is hot, add onions and cook for 2 to 3 minutes or until they become tender while stirring occasionally. Add garlic and cook for a minute.
  2. Add beef, season with salt, and cook for 7-10 minutes or until meat turns brown.
  3. Add Italian seasoning, tomato sauce and diced tomatoes, stir to combine everything and let the mixture for 20 minutes while stirring rarely. Add mushrooms, bell peppers, corn kernels, and stir for 3 to 4 minutes or until vegetables are soft.
  4. Prepare the oven and preheat it to 350°F.
  5. Add half of the cheese mixture and cooked macaroni into the meat sauce, mix well and transfer to the casserole.
  6. Sprinkle the remaining cheese mixture on the casserole and loosely cover it with aluminium foil. Place in the oven and bake for 15 minutes.
  7. Once the casserole is ready, remove it from the oven and rest for 5 to 8 minutes. Serve and enjoy!
