2 tbsp. olive oil

2 ½ cups dry shell pasta

1 lb. boneless & skinless chicken breast, cut into 1” cubes

2 cups fresh baby spinach

1 cup mushrooms, sliced

1 medium onion, chopped

4 garlic cloves, finely chopped

1 cup canned tomatoes

2 tbsp. vodka

1 cup heavy cream

½ cup whole-fat milk

½ cup parmesan cheese, freshly grated

1 tbsp. red chili flakes

½ tsp black pepper

Salt, to taste

Freshly chopped pasta, for garnish


  1. Pour water into a large pot over medium-high heat. When the water starts to boil, add 1 tsp. of salt and pasta, cook according to the package instructions. When the pasta is cooked, drain the water while reserving ½ cup of the pasta water for later use in the sauce.
  2. Add 2 tbsp. of olive oil in a skillet over medium-high heat. Once the oil is hot, add the onions and sauté until they change color. Then add garlic and sauté for a minute until fragrant.
  3. Add sliced mushrooms and chicken cubes to the skillet, and cook until the chicken is cooked and the mushrooms are tender.
  4. Stir in canned tomatoes and tomato paste, and cook for 5 minutes, stirring often. Add fresh spinach and continue t cook for a minute or two.
  5. pour in 2 tbsp. of vodka and cook for 2 to 3 minutes.
  6. Add 1 cup of heavy cream and ½ cup of full-fat milk to the skillet. Stir in red chili flakes, black pepper, and salt to taste. Stir until smooth.
  7. Add ½ cup of grated parmesan cheese and the reserved pasta water to the skillet. Cook for a minute until the cheese is melted and the sauce is thickened.
  8. Now add in cooked pasta and mix until well combined.
  9. Once pasta is ready, garnish with fresh parsley and serve hot.
