Hearty Mushroom Soup – The Recipe

Preparation time: 5 minutes

Ingredients

4 tbsp. butter

1 lb. white button mushrooms, sliced

1 yellow onion, diced

4 garlic cloves, minced

¼ cup red wine

5 tbsp. all-purpose flour

3 cups vegetable stock

1 cup heavy cream

1 tbsp. Italian seasoning

Black Pepper to taste

salt to taste

Croutons, for garnishing

Preparation

  1. Add butter to a Dutch oven over medium heat. Once the butter melts, add onion and sauté for 3 to 4 minutes.
  2. Add garlic and sauté for another minute until fragrant.
  3. Add mushrooms, salt, and Italian seasoning. Sauté for 10 to 12 minutes while stirring intermittently until mushrooms release all the liquid.
  4. Add red wine, increase the heat to high and stir for 3 to 4 minutes or until the wine disappears and the mushrooms shimmer.
  5. Reduce the heat back to medium, dust flour on top and toast it for 1 to 2 minutes while stirring continually. Pour one cup of hot stock into the Dutch oven and mix it using a wooden spoon.
  6. Pour the second cup of stock into the mixture and stir it well to combine. Then, add the third cup of stock and gently whisk it as you bring it to a simmer. As it simmers, the mixture will thicken.
  7. Add cream and stir until thoroughly combined and season with black pepper and salt to taste.
  8. Once the soup is ready, ladle it in bowls, garnish with Croutons and serve with crusty bread.
