Ingredients
  

For the Kabobs

  • 1 14 oz block extra-firm tofu
  • 1 red bell pepper
  • 1 zucchini
  • 1 red onion
  • 1 cup cherry tomatoes

For the Marinade

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 2 tbsp curry powder
  • 1 tbsp soy sauce or tamari
  • 1 clove garlic
  • 1 tsp grated ginger
  • Salt and pepper to taste

Instructions
 

  • Press and cube tofu.
  • Whisk the marinade ingredients together.
  • Marinate tofu for at least 30 minutes.
  • Thread tofu and veggies onto skewers.
  • Grill for 10– 15 minutes, turning and basting occasionally.
  • Serve with your favorite sides.

Notes

Use tamari for a gluten-free version.
Customize with your favorite seasonal veggies like mushrooms, eggplant, or squash.
For added richness, toss kabobs with coconut yogurt before serving.
