For the Kabobs
- 1 14 oz block extra-firm tofu
- 1 red bell pepper
- 1 zucchini
- 1 red onion
- 1 cup cherry tomatoes
For the Marinade
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 2 tbsp curry powder
- 1 tbsp soy sauce or tamari
- 1 clove garlic
- 1 tsp grated ginger
- Salt and pepper to taste
Press and cube tofu.
Whisk the marinade ingredients together.
Marinate tofu for at least 30 minutes.
Thread tofu and veggies onto skewers.
Grill for 10– 15 minutes, turning and basting occasionally.
Serve with your favorite sides.
Use tamari for a gluten-free version.
Customize with your favorite seasonal veggies like mushrooms, eggplant, or squash.
For added richness, toss kabobs with coconut yogurt before serving.
