Hearty Tortellini Soup

This delicious hearty tortellini soup is a simple soup made with vegetable broth and spinach. It is hearty and comforting, perfect for dinner or lunch.

Ingredients
  

  • 4 tbsp. butter
  • 20 oz. pre-made tortellini
  • 1 lb. Italian sausage casing removed
  • 1 small onion diced
  • 4 garlic cloves finely chopped
  • 2 celery stalks diced
  • 2 carrots peeled & diced
  • 1 cup bell peppers diced
  • 1 tsp. red chilli flakes
  • 8 cups chicken broth
  • 1 cup canned tomato finely chopped
  • 2 tbsp. tomato paste
  • 1 cup heavy cream
  • 6 basil leaves roughly chopped
  • ½ cup parmesan freshly grated
  • Black Pepper to taste
  • Salt to taste

Instructions
 

  • Add 2 tbsp of butter to a pot over medium heat.
  • Once the butter melts, Add sausage and cook until brown, breaking it into bite-sized chunks. Once cooked, remove the sausage from the pot and set it aside.
  • In the same pot, melt the remaining butter. As the comforting aroma of the sautéed onion, carrots, canned tomatoes, tomato paste, and celery fills your kitchen, let it simmer for 6 to 8 minutes.
  • Add garlic, bell pepper, chili flakes, black pepper and salt. Stir gently to mix all the ingredients.
  • Add chicken broth, and bring the mixture to a boil. Let it simmer for 5 minutes.
  • Return sausage to the pot. Add basil and continue to simmer for 15 minutes.
  • Add Tortellini to the pot and continue to cook for 3 minutes.
  • Add the indulgent heavy cream, stir well, and let it simmer for another 2 to 3 minutes, creating a rich and creamy texture that will satisfy your cravings.
  • Once the soup is ready, remove it from the heat. Stir in grated parmesan cheese. Serve.

Notes

Leftover Cooked soup should be stored in an airtight container and refrigerated, do not let it sit at room temperature for more than two hours. The soup will last for 3 to 4 days in the refrigerator.
You could also freeze the cooked Tortellini Soup in an airtight container. The soup will last up to 4-6 months in the freezer, it will last longer but the taste will not be as good. Thaw the frozen Tortellini Soup in the fridge overnight. Thawed soup will keep in the fridge for 3-4 days.
