Instructions
Whisk together flour, sugar, baking powder, and salt in a large bowl.
Whisk together milk, egg, melted butter, and vanilla extract in a separate bowl.
Pour wet ingredients into the dry ingredients and stir until just combined.
Let batter rest for 5–10 minutes if time allows.
Heat a non-stick skillet over medium heat and grease lightly.
Pour ¼ cup of batter for each pancake and cook for 2–3 minutes, until bubbles form on the surface. Flip and cook for an additional 1–2 minutes.
Serve warm with toppings of choice.
Notes
For Extra Fluffiness: Don’t overmix the batter—lumps are okay!
Make It Dairy-Free: Use oat or almond milk and a neutral oil like avocado or coconut oil.
Freezer-Friendly: Cool completely, then store in a freezer bag for up to 2 months. Reheat in a toaster or microwave.
Flavor Variations: Add blueberries, chopped bananas, or a dash of cinnamon to switch it up.
