Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk dairy or dairy-free
  • 1 large egg
  • 3 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions
 

  • Whisk together flour, sugar, baking powder, and salt in a large bowl.
  • Whisk together milk, egg, melted butter, and vanilla extract in a separate bowl.
  • Pour wet ingredients into the dry ingredients and stir until just combined.
  • Let batter rest for 5–10 minutes if time allows.
  • Heat a non-stick skillet over medium heat and grease lightly.
  • Pour ¼ cup of batter for each pancake and cook for 2–3 minutes, until bubbles form on the surface. Flip and cook for an additional 1–2 minutes.
  • Serve warm with toppings of choice.

Notes

  • For Extra Fluffiness: Don’t overmix the batter—lumps are okay!
  • Make It Dairy-Free: Use oat or almond milk and a neutral oil like avocado or coconut oil.
  • Freezer-Friendly: Cool completely, then store in a freezer bag for up to 2 months. Reheat in a toaster or microwave.
  • Flavor Variations: Add blueberries, chopped bananas, or a dash of cinnamon to switch it up.
