Ingredients
  

  • 2 cups whole wheat flour or all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • cup honey or maple syrup
  • ½ cup milk dairy or non-dairy
  • 1 teaspoon vanilla extract
  • cup melted coconut oil or butter
  • 2 cups diced or shredded apples

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9-inch round or square baking pan.
  • Mix dry ingredients. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  • Mix wet ingredients. Whisk eggs, applesauce, honey (or maple syrup), milk, vanilla, and melted coconut oil in another bowl.
  • Combine. Gradually mix the wet ingredients into the dry ingredients, stirring gently. Fold in the apples.
  • Bake. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes clean.
  • Cool and serve. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For best results, use freshly grated nutmeg instead of pre-ground for a stronger flavor.
  • If your apples are very juicy, pat them dry with a paper towel before adding them to the batter.
  • The cake tastes even better the next day as the flavors develop.
  • Store leftovers in an airtight container to maintain moisture.
  • If using a glass baking dish, you may need to add a few extra minutes to the baking time.
