Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch round or square baking pan.
Mix dry ingredients. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
Mix wet ingredients. Whisk eggs, applesauce, honey (or maple syrup), milk, vanilla, and melted coconut oil in another bowl.
Combine. Gradually mix the wet ingredients into the dry ingredients, stirring gently. Fold in the apples.
Bake. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes clean.
Cool and serve. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use freshly grated nutmeg instead of pre-ground for a stronger flavor.
If your apples are very juicy, pat them dry with a paper towel before adding them to the batter.
The cake tastes even better the next day as the flavors develop.
Store leftovers in an airtight container to maintain moisture.
If using a glass baking dish, you may need to add a few extra minutes to the baking time.
