Cranberry White Chocolate Blondies – The recipe

Preparation time:  15 minutes

Cooking time: 30 minutes

Servings:  8 slices

Ingredients

½ cup butter melted

½ cup granulated sugar

¼ cup light brown sugar

1 egg large

2 tsp. vanilla extract

1 cup all-purpose flour

½ tsp. baking powder

¼ tsp. salt

1 cup dried cranberries

¾ cup white chocolate chips

For the topping

1/3 cup white chocolate melted

¼ cup dried cranberries

¼ cup white chocolate chips

Preparation

  1. Prepare the oven and preheat it to 350 degrees F. Also, prepare an 8″ square baking tin by lining it with parchment paper.
  2. Add melted butter and sugars in a large bowl and whisk until the mixture becomes fluffy and pale.
  3. Add vanilla extract and egg, and continue to whisk until the mixture becomes creamy. Add Salt, baking powder, and flour, and mix well until everything combines.
  4. Add chocolate chips and cranberries, and mix until equally distributed.
  5. Transfer the mixture to the prepared baking tin and level the surface using a spatula.
  6. Place in the oven and bake for 25 to 30 minutes until you start to pull away from the edges. If looking a bit under-baked, it will set when cooled down.
  7. Remove from oven and leave to cool. Then remove from the tin and place on the wire rack until cooled completely.
  8. Once cooled completely, drizzle melted white chocolate on top and scatter white chocolate chips and cranberries.
  9. Leave the cake until the melted chocolate settles, then slice and serve.
