1 tsp. baking soda
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 tsp. mint extract
2 cups Mint M&Ms, divided
Preparation
- Prepare the oven and preheat it to 375 degrees F. Also, prepare a baking sheet by lining it with parchment paper.
- Mix baking soda, salt, and flour well in a mixing bowl until all the ingredients are well combined. Set aside.
- Add brown sugar and butter to another bowl and whisk using an electric mixer until fluffy and light. Using a silicone spatula removes any residue or mixture clinging to the edges of the bowl.
- Then add eggs, granulated sugar, and mint extract, and keep whisking until all the ingredients are well combined and the mixture becomes creamy.
