Paleo Chicken Tenders – The recipe

Ingredients

1 lb. chicken breast tenders

1 tbsp. Coconut oil melted

½ tsp. dried oregano

1 tsp. Paprika

¾ tsp. garlic powder

½ tsp. onion powder

1 egg, whisked with 1 tsp. water

2 tbsp. lemon juice

Salt to taste

Black pepper, to taste

Seasoning Mix

½ cup almond flour

½ tsp. onion powder

½ tsp. garlic powder

1 tsp. dried oregano

1 tsp. dried parsley

½ tsp. paprika

Salt to taste

Black pepper to taste

Preparation

  1. Prepare the oven and preheat it to 425 degrees F. Also, prepare a cookie sheet by lightly greasing it with coconut oil.
  2. Transfer the chicken tenders to a bowl, add the remaining coconut oil, lemon juice, black pepper, salt, oregano, garlic powder, onion powder, and paprika, and toss gently to make an even coating of spices on the chicken.
  3. In another bowl, add almond flour, oregano, dried parsley, paprika, onion powder, garlic powder, salt, and black pepper, and mix well to prepare the seasoning mix.
  4. Dip the coated chicken breast tenders in the egg wash, dredge into the almond seasoning mix, shake gently to remove the excess seasoning, and arrange them on the prepared cookie sheet in a single layer.
  5. Place the cookie sheet in the oven and bake for 15 to 20 minutes or until the chicken is thoroughly cooked. Do not forget to flip the side of the chicken halfway through cooking.
  6. Once the chicken is ready, remove from the oven, transfer to the serving dish, and serve it hot.
