Ingredients
½ baguette
1 ½ tbsp. extra virgin olive oil
½ cup shredded parmesan cheese
3 Roma tomatoes, cored & diced
½ cup basil leaves, chopped
3 garlic cloves, divided
½ tbsp. balsamic vinegar
1 tbsp. Extra virgin olive oil
¼ tsp. Italian seasoning
¼ tsp. sea salt
¼ tsp. black pepper
Bruschettas Preparation
- Prepare the oven and preheat it to 400 degrees F. Also, prepare a baking sheet by lining it with parchment paper.
- Arrange the baguette on the prepared baking sheet and cut it diagonally into ½” thick slices.
- Apply the 1 ½ tbsp. of olive oil on both sides of the baguette slices using a brush and sprinkle the top with shredded parmesan cheese.
- Place the baguette in the oven for 5 minutes. After 5 minutes, turn the broil function of the oven to high heat and broil the toasts for an additional 2 minutes or until the color of the edges turns golden brown.
- Meanwhile, Drain any excess juice of tomatoes and transfer them to a medium-sized bowl. Add the chopped basil leaves to the bowl with the tomatoes.
- Combine 3 tablespoons of olive oil with 1 teaspoon of minced garlic and set it aside. Then, add the minced garlic to the mixing bowl with the basil and tomatoes.
- Season the tomato mixture with 1 tbsp of olive oil, balsamic vinegar, sea salt, and black pepper. Give it a gentle stir to combine, and leave it to marinate for 15 to 30 minutes.
- Serve the salsa with bruschetta toast and a drizzle of olive oil on top.
