Ingredients

4 pork chops

For the dry rub

¼ cup dark brown sugar

2 tsp. smoked paprika

2 tsp. garlic powder

2 tsp. onion powder

½ tsp. cayenne pepper

1 tsp. mustard powder

1 tsp. Italian seasoning

2 tsp. black pepper

1 tbsp. salt

Preparation

  1. To prepare sweet rub, add brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, mustard powder, Italian seasoning, black pepper, and salt to a small bowl and mix all the ingredients well.
  2. Prepare the grill and preheat to around 400 degrees F, both direct and indirect heat sides of the grill.
  3. Apply the sweet rub on all sides of the pork chops and pat gently to stick the rub.
  4. Transfer the chops to the hottest part of the grill and sear on each side for 2 to 3 minutes.
  5. Then shift the pork chops to the indirect heat side and continue to cook each side for another 5 to 6 minutes or until the internal temperature of the chops reaches 145 degrees F.
  6. Once the chops are ready, remove them from the grill and rest for 5 to 6 minutes, then slice and serve.
